Craving Thai Boat Noodles?
Here’s a recommendation: Thai Boat Noodles Waterfall located at Golden Mile Food Centre.
The white signage catches the eye with a minimalist design that contrasts the typical visual overload.
The term “waterfall” refers to a traditional Thai way of preparation that includes blood which is added to the broth – giving it a thicker texture and deeper, more intense flavour.
This method is known in Thai as “nam tok” (น้ำตก), which literally translates to “waterfall”.
However, in Singapore, blood cannot be used, and thus is removed or substituted with other ingredients.
The hawker stall menu is straightforward, offering four variations of Thai style noodles: the classic Thai Boat Noodles ($5.50), Boat Noodles Dry ($5.50), Tom Yam Boat Noodles ($6), and Pork Soup ($5.50).
For those wanting a shared dish, there’s the Boiled Pork with Dipping Sauce ($6).
Additionally, you can customise your choice of noodles, with selections like Thai white noodle, mee kia, mee hoon, and instant noodles available at no extra charge.
I went for the Boat Noodles Soup ($5.50), which arrived piping hot with an assortment of pork-based toppings: pork balls, tender pork slices, pork liver, crispy pork lard, beansprouts, and greens.
The true surprise was the robust-tasting soup.
It was a flavourful, herbal concoction with garlicky undertones and a light spiciness that balanced the savoury elements.
I found this as good as some of the Thai restaurants out there, yet at a more modest pricing.
Each pork element brought a distinct texture: the pork balls had a meaty bite, the pork slices were tender without any strong “porky” aftertaste, and the pork lard was golden and crunchy.
I enjoyed this version with mee kia which reminded me slightly of the bowl from Bangkok’s Thong Smith.
Thai Boat Noodles Waterfall’s offerings reflect a commendable balance between authentic taste and affordability. A solid bowl.
