Geylang Bahru Food Centre, located in Singapore’s Kallang area, has been a beloved hawker centre since its establishment in 1978. That’s a long.

This food centre is known for its wide variety of local hawker favourites, though it is seldom talked about on social media.

With over 70 stalls, it serves a diverse range of dishes, from affordable Michelin Bib Gourmand Chilli Ban Mian, Boneless Braised Duck Rice, Spinach Soup to other hawker delights.

Before we settle the debate – whether dry or soup, let us agree that whichever your preference may be, I prefer the Dry version here.

Hui Wei’s menu includes Ke Kou Mian, Seafood Ee Mian, Tom Yum La Mian, Sliced Fish Bee Hoon, Dry Chilli Ban Mian, Ban Mian, Sliced Fish Ban Mian, and Fried Fish Ban Mian.

The noodles in Dry Chilli Ban Mian are freshly made, giving them a soft and pleasantly chewy texture. The sauce mixture has a distinctive fiery kick and an exhilarating spiciness.

The meat was marinated and cooked until tender, while the egg’s creamy yolk added a luscious richness that tied all the components.

I thought that the soup version was more ordinary (though still above average), and it is definitely the Dry Chilli Ban Mian that stands out more here.

An all-rounder for days when you are craving good noodles.

In the morning, fresh birds are put through Cheok Kee’s own blend of braising liquid (made of soy sauce and spices) and braised for two hours with more than 20 ingredients and aromatic spices.

By noon, a full row of braised ducks is ready in the display case. The number rapidly depletes through the lunch crowd and steadily for the rest of the day.

The hawker also emphasises the importance of understanding the varying fat content in different breeds of ducks to adjust the cooking process – some breeds have more fat, some less.

Items served include Braised Duck Rice, Duck Drumstick Rice, and Braised Duck Porridge.

The rice was considerably flavourful, though I thought the duck pieces were slightly on the dry side. Instead, I found the chilli sauce more of a standout.

On a colder day, perhaps the Braised Duck Porridge can be better. The bowl of gooey congee is, like its rice counterpart, topped with braised liquid and duck meat.

Spinach Soup has become a common sight at hawker centres, especially in recent years; this seemingly modest dish packs a punch with its nutrient-rich profile and comforting flavours.

In Yuan Yang Spinach Soup, every soup comes with a choice of carbs, including Thin Bee Hoon, Mee-Tai Mak, Koka Noodles, Macaroni and Rice.

The simplest and most popular version is the Spinach Seafood Soup. The presentation is nothing to shout about, as it is a green-tinted bowl of soup with bits of egg floating around.

In the alternative, get the Spinach Century & Salted Egg Soup, which I enjoyed better.

More savoury intensity arrives from the salted egg; while the century egg is truly an acquired taste only for those who enjoy it, it does make the soup more complex-tasting.

A blink-and-you-miss stall, which surprisingly got awarded with a Michelin Bib Gourmand.

Despite the diminishing prevalence of handmade Kueh in the local food scene, this modest stall still crafts their dumplings by hand.

On the menu are Soon Kueh 笋粿, Rice Kueh 饭粿, Ku Chai Kueh 韭菜粿, and Hakka Abacus Seed.

The Soon Kueh 笋粿 enwrapped a noticeably soft, well-marinated filling within its mildly chewy skin. I liked the size of this, not too big or small.

The bamboo shoot stuffing inside had a delicate, earthy aroma that subtly intertwines with the tender, elastic skin. Loved the chilli sauce, by the way.

Oh, prawn mee with hotpot? Wen Wen Pork Rib Big Prawn Mee offers a different take on traditional prawn mee by combining it with a steamboat experience.

They are known for their Seafood Pot filled with generous amounts of seafood and meat. You can also top-up more ingredients like vegetables and mushrooms to the pot.

The broth enhanced by hours of simmering, rich with the natural sweetness of prawns and pork, is the star.

Of course, you can have the usual normal-sized Prawn Noodles here to experience fresh prawns and fall-off-the-bone pork ribs.

The stall is particularly known for its generous portions of minced pork and braised mushrooms, which complement the al dente mee kia.

It often sees long queues, especially during peak hours.

The combination of savoury pork and earthy mushrooms offers some comfort.

However, some diners might find the bowl overall a tad on the bland side, lacking the punchy, vinegary kick that defines many other versions of BCM elsewhere.

The stall’s take on the dish may not be the most intense or robust in flavour, but its subtlety appeals to those who prefer a lighter take.

Shi De Fu Wanton Mee offers a nostalgic take on the classic hawker dish. The noodles are cooked to an ideal springy texture, with a slight firmness that gives each bite a satisfying chew.

Also, I liked that the noodles are lightly tossed in a blend of black sauce and chilli, delivering a balanced mix of sweetness and heat.

The wantons are wrapped in thin skins and are generously filled, offering a good bite and a pleasant contrast to the noodles.

Suhaime’s is a well-regarded spot for Mee Rebus, the classic Malay dish that holds a special place in the hearts of many residents nearby.

The history behind Suhaime’s, as inheritors of the famous Geylang Lorong 1 Mee Rebus recipe, adds a layer of appeal.

The version at Suhaime’s has comforting simplicity. The gravy, made from a blend of sweet potatoes and spices, offers a balance that isn’t too thick or watery.

It is poured generously over soft yellow noodles, accompanied by standard toppings like boiled egg, tau pok (fried tofu), and bean sprouts.

The flavours are mild, making it approachable for those who prefer a less intense spice level, though some might find it lacks the robust kick they crave.

Ah Yong Cooked Food is known for its value-for-money dishes like Nasi Lemak and Economic Bee Hoon.

The Nasi Lemak Set Meal is a favourite among regulars. The set comes with fragrant coconut rice, a crispy fried chicken wing, a fried egg, sambal, and ikan bilis.

The rice is not too rich but fragrant enough to complement the crunchy texture of the chicken. The sambal is mildly spicy, adding just the right kick.

The Economic Bee Hoon and noodle dishes, which are priced affordably, are another strong point of the stall.

While the Google rating is not too high here, there is usually a long queue.

You find all sorts of noodles in this one stall.

From Shredded Chicken Noodle, Fishball Noodle, Minced Meat Noodle, Hock Chew Fishball Noodle, Wanton Noodle, Wanton Minced Meat Noodle to Dumpling Noodles.

Despite its unassuming appearance, Hock Ann has managed to cultivate a loyal following among locals, who appreciate the portion sizes which are reasonable for the price.
